Step 1
Season the beef with salt and pepper and toss it in the flour and paprika.
Step 2
Heat the oil in a cast-iron potjie (or heavy pot) and brown the beef in batches. Add the onions and garlic and fry until soft.
Step 3
Stir in the tomato paste, then add the stock, wine and bay leaves. Cover and simmer gently for about 2 hours, until the beef is nearly tender.
Step 4
Layer the carrots and potatoes on top of the meat, then the mushrooms and green beans. Do not stir from now on.
Step 5
Cover and simmer for another 40 to 50 minutes, until the vegetables are tender. Check the seasoning and serve from the pot.
Before you serve
Small details for confident timing, useful swaps, and safer leftovers.
Keep the heat low: a potjie should simmer gently, not boil.
Layering the vegetables instead of stirring keeps them whole and lets each one steam in the juices.
Serve with rice, pap or crusty bread.
Potjiekos is a slow-cooked South African stew made in a three-legged cast-iron pot over coals. The meat goes in first and the vegetables are layered on top without stirring, so each one cooks in the rich juices. It also works on a stove in a heavy pot.
